In June, we were lucky enough to spend some time in the Springs with some of our racing buddies. It has been 25-30 years since I spent any time there. The last time was in 1987 and we got snowed out at Christmas (I would say snowed in, but we were staying in the Springs and had gone to visit some friends in Longmont, and then couldn’t get back in to get our stuff). Before that, it was 1977 when my sister entered the Air Force Academy as part of the second class of women enrolled – she didn’t end up staying but it was an incredible experience for all of us.
So, back to our June visit, the Friday night we were there we spent first at Southside Johnny’s – wow, what great food. Serge was our host and has done an awesome job putting together the menu. We all ordered different items so we could taste test – I found my favorite with the very first bite. Sweet potato fries with marshmallow – caramel dipping sauce, an incredible combination. I am always amazed at how creative cooks can be, I never would have thought of that combo. I mean, it’s a fry, right? Shouldn’t you dip it in ketchup or ranch, or some combination of the two, like fry sauce (Idaho/Utah residents will know what that is)? Marshmallow and caramel don’t even live in the same space as ketchup and ranch. Thank you Serge for a great evening and a wonderful addition to my taste buds. We will be back again.
Our next stop that night was the Relay for Life of Central Colorado Springs at the Grace Center for Athletics. We stopped because it was the same night as my Relay at home and I was missing it. The event organizers did a great job, Justin Williams (an Idol finalist) was performing while we were there. Relay for Life is one of my passions, but I’ll talk more about that later – in fact, probably numerous times 🙂
